The Path to Distillation
Though the Beam family name is synonymous with bourbon, Stephen’s early years were shaped more by curiosity than expectation. After graduating from high school in 1976, he learned whiskey was not popular; the bourbon depression was causing the rise of the clear spirits, and brown spirits were in decline. Nevertheless, the pull of the family tradition was irresistible. While attending the 200th anniversary of Jim Beam, conversations with Booker Noe and other industry giants convinced Beam he needed to give bourbon-making a try. Stephen, together with his brother, Paul, soon formed a plan. With limited information, the duo eventually found some distillery groups who helped set them on the path. Traveling across Kentucky and beyond, the brothers visited historic distilleries, studied traditional methods, and absorbed the nuances that differentiate good whiskey from great. They became adept at the intricacies of mash bills, yeast strains, barrel selection, and aging processes, the essential elements that transform simple grains into extraordinary liquids.
Founding Limestone Branch Distillery
In 2011, Stephen and Paul co-founded Limestone Branch Distillery in Lebanon, Kentucky. Their vision was bold, yet rooted: to honor their ancestors by producing small-batch, handcrafted bourbons and rye spirits in a time-honored fashion. The distillery’s name pays homage to Kentucky’s famed limestone-filtered water—an ingredient long credited as an essential piece of the region’s whiskey excellence.
The brothers started small and slow. Possessing limited equipment and even more limited experience, they acquired a 150-gallon pot still and a 600-gallon finishing still. They built an original still from stainless steel storage tanks. Running on adrenaline and flying-by-the-seat-of-your-pants euphoria, they gathered even more information from local moonshiners. Their biggest break came when, shockingly, their uncle, Toddy Beam, knew of a jug at the Oscar Getz Museum of Whiskey History in Bardstown that might contain original DNA from their great-grandfather, Minor Case Beam’s original yeast recipe. Hastily, that jug was retrieved. The 150-year-old DNA was scraped from it, and the yeast particles were promptly identified. The Beam brothers then sourced local grains, utilized open fermentation, and distilled in copper pot stills, returning to the methods that their ancestors would recognize. Overseeing every step, Stephen ensured that each bottle of whiskey that was ultimately produced reflected both the Beam legacy as well as Limestone Branch’s unique identity.
Reviving a Legacy: Yellowstone Bourbon
One of Stephen’s most significant achievements at Limestone Branch has been the revival of Yellowstone Bourbon. Originally established in 1872, Yellowstone was an iconic Kentucky bourbon brand that had fallen out of production. Recognizing its historic importance, Stephen and Paul acquired the brand and set about restoring its former prestige. Under Stephen’s guidance, Yellowstone was not merely reintroduced as a relic but reimagined for a new generation. He worked tirelessly to develop blends that balanced the classic bourbon notes of caramel, vanilla, and oak with innovative twists. Limited-edition releases and special cask finishes drew acclaim, helping to reestablish Yellowstone as a beloved name among whiskey aficionados.
The Philosophy of Craft
