Early Life and Education 

Born and raised in Dublin, Ireland, Conor O’Driscoll’s early years were shaped by a culture steeped in history and a country renowned for its own whiskey heritage. However, O’Driscoll’s path did not initially point toward distillation. Instead, he pursued chemical engineering at University College Dublin, drawn by an interest in how things work at the molecular level and the challenge of problem-solving in complex systems. 

After completing his undergraduate studies, O’Driscoll sought to broaden his horizons. Like many before him, he was lured by the wide-open possibilities of the United States. He moved to Kentucky, a state synonymous with bluegrass, horse racing, and, of course, bourbon. The transition from Ireland to the American South would prove to be as transformative for O’Driscoll as it would for the bourbons he would go on to influence. 

Entry into the Bourbon Industry 

O’Driscoll’s first professional steps in Kentucky were not immediately within whiskey production. Rather, he began his career in the pharmaceutical and chemical manufacturing sectors, using his expertise to ensure high product standards and efficient production processes. This background would later prove invaluable in the rigorous quality control and process optimization that distilling demands. 

His journey into bourbon began at Brown-Forman, a Louisville-based spirits company known for iconic brands like Old Forester and Woodford Reserve. Here, O’Driscoll rose through the ranks, gaining hands-on experience in all aspects of whiskey production. He learned the importance of grain selection, fermentation, distillation, and barrel aging—all the while developing a passion for the uniquely American spirit that is bourbon. 

Master Distiller at Heaven Hill 

In 2019, O’Driscoll was appointed as the Master Distiller at Heaven Hill Distillery, succeeding a lineage of legendary figures. Heaven Hill, founded in 1935 in Bardstown, Kentucky, is family-owned and revered for producing some of the most beloved bourbons in America, including Evan Williams, Elijah Craig, and Henry McKenna. 

As Master Distiller, O’Driscoll oversees all aspects of whiskey production, from the careful sourcing of grain to the final selection of barrels for bottling. His scientific background allows him to approach the art of distillation with analytical rigor, ensuring consistency and quality across Heaven Hill’s vast portfolio. Yet, he is also keenly aware of the importance of intuition, tradition, and the “feel” that comes only with years of experience.
