“From Ballast Point to Bourbon”

Yuseff Cherney’s impact on American craft spirits is rooted in a lifelong fascination with fermentation and a career that unites brewing, distillation, innovation, and entrepreneurship. He has played a central role in shaping Cutwater Spirits into one of the most award-winning and recognizable craft spirits producers in the US, known both for its bottled spirits and for pioneering ready-to-drink canned cocktails.

Born in San Francisco, California in September of 1969, Cherney grew up largely in San Diego. He spent most of his life in SoCal before launching his signature spirits work. He attended the University of California, San Diego, graduating in 1992 with a Bachelor of Arts in Philosophy and a minor in Biological Anthropology. This academic foundation, combining analytical thinking with a scientific curiosity, would later inform his thoughtful, experimental approach to brewing and distilling. But long before spirits entered his professional life, Cherney’s journey began with beer. While in college, he developed an interest in brewing, experimenting with fermentation and techniques that engaged both the science and artistry of making that spirit. After several years of homebrewing and study, Cherney began teaching brewing classes through the UC San Diego Craft Center, a role that helped him refine his skills and build a reputation in San Diego’s burgeoning craft beer community.

Just after graduating from UC San Diego, Cherney met Jack White, founder of Home Brew Mart, a homebrew supply store in San Diego. Impressed by Cherney’s brewing expertise, White hired him, beginning a long professional partnership that would eventually help launch Ballast Point Brewing Company in 1996, with Cherney acting as head brewer. Over the next decade, he was instrumental in building Ballast Point into one of San Diego’s signature craft breweries. Cherney’s focus on quality and experimentation set the stage for something even more ambitious.

By the mid-2010s, Ballast Point’s beer division had matured into a distinct creative force. In 2015, it was sold to Constellation Brands, and Cherney and fellow founder Earl Kight spun out the spirits operations into a new enterprise. In 2017, Cutwater Spirits was officially established as a separate company, with Cherney as Co-Founder and Master Distiller. But Cutwater Spirits was not just another craft distillery, it was the realization of decades of brewing and distilling expertise, combined with a bold belief in innovation and accessibility. Cherney envisioned spirits that were technically excellent but also approachable and suited for a variety of occasions.

Unlike Ballast Point, at Cutwater, whiskey and bourbon are core parts of its portfolio. Cherney’s early experiments at Ballast Point laid the technical foundation for Cutwater’s spirits production, including barrel-aged whiskey and bourbon. These spirits reflect his deep knowledge of fermentation, cut points, and aging, skills he refined over decades working with grains, barrels, yeast and fermentation Chemistry. Under Cherney’s guidance, Cutwater’s American whiskey and bourbon expressions have become staples of its lineup. The brand’s Devil’s Share Bourbon and American Whiskey have gained acclaim, including medals at prestigious competitions, and testifying to the quality of Cherney’s distillation work. In the 2021 San Francisco World Spirits Competition, Cutwater Spirits earned significant recognition: its Devil’s Share Bourbon took a gold medal, while Cutwater American Rye Whiskey also emerged with gold honors among many other awards for the distillery’s broader portfolio.

Today, Cherney remains actively involved at the Cutwater production facility in San Diego, where he focuses on refining recipes across an ever-expanding portfolio of spirits and successful canned cocktail offerings. His leadership has helped Cutwater achieve more than 1,000 awards across spirits and cocktails, establishing the brand as one of the most decorated in the US marketplace.

Yuseff Cherney and his wife Michelle still call Southern California home. But now, when he locks the distillery at night, the smell of grain and yeast lingers in the air, familiar as the brewery of his young career. He knows now that bravery does not always announce itself loudly. Sometimes it looks like serial entrepreneurship, trusting one’s roots, and letting growth happen one careful step at a time. His barrels continue to age, and his company continues to grow. Meanwhile, Yuseff’s story, like the whiskey itself, is still unfolding.
