Joe Bidinger
Joe Bidinger emerged as a co-founder of one of Columbus, Ohio’s modern craft distilleries at a time when the state’s spirits industry was regaining momentum after more than a century of dormancy. As co-owner and distiller of Echo Spirits Distilling, he helped build a small-scale, grain-to-glass operation grounded in hands-on production and local engagement, with a clear emphasis on developing in-house whiskey.
Born in April 1986, Bidinger grew up in Ohio and remained closely tied to the state throughout his early life and career. He attended The Ohio State University, graduating in 2008 with a degree in finance. Following graduation, he joined the university’s Wexner Medical Center as a systems analyst, a role he held for approximately eleven years. His work in a structured, data-driven environment would later inform his approach to distilling, particularly in areas such as process control and consistency. During Bidinger’s time at the medical center, Ohio’s modern craft distilling industry was beginning to take shape. Although still limited in scale, the number of small distilleries in the state was gradually increasing. This emerging landscape presented opportunities for new entrants willing to navigate complex regulations and the long timelines associated with whiskey production. Recognizing this opening, Bidinger partnered with Nikhil Sharoff to establish a distillery focused on direct production rather than sourcing finished spirits. That decision required patience and capital investment, particularly given the years required to maturebourbon, but it also defined the distillery’s long-term identity. Echo Spirits Distilling was soon established in Columbus, Ohio. The operation combined a working distillery with a public-facing cocktail bar, a model that allowed for immediate revenue while whiskey stocks matured. The facility was equipped with copper pot stills and designed for small-batch production, enabling Bidinger and his team to maintain direct control over each stage of the distilling process. In line with the approach taken by many craft distillers, early production focused on clear spirits such as vodka and rum, which could be sold without extended aging. At the same time, Echo Spirits began filling barrels of whiskey, including bourbon made from grain-forward mash bills centered on corn. This dual-track strategy provided both short-term cash flow and a foundation for future whiskey releases.
Bidinger’s role within the company spanned both technical and strategic functions. He was directly involved in distillation, recipe development, and production management, while also helping guide the broader direction of the business. Drawing on his analytical background, he approached distilling with attention to fermentation variables, distillation cuts, and barrel selection. This methodical approach supported consistency while allowing for controlled experimentation within the distillery’s small-batch framework.
As the distillery matured, its whiskey program became increasingly central to its identity. Echo Spirits maintained its commitment to producing its own bourbon rather than sourcing from establishedproducers. Barrels were filled and aged on-site, with the understanding that meaningfulreleases would require several years of development. Over time, this steady accumulation of inventory positioned the distillery to transition from early-stage production into a more established whiskey program.
Alongside its production efforts, Echo Spirits cultivated a local following through its cocktail bar and tasting experiences. The integration of hospitality and distilling created a direct connection between customers and the production process. Visitors could engage with both the finished product and the people responsible for making it, reinforcing the distillery’s emphasis on transparency and accessibility. This approach distinguished Echo Spirits from larger producers, where such direct interaction is less common. The distillery also became part of Ohio’s broader craft distilling ecosystem. Through participation in initiatives associated with the Ohio Distillers Guild, Echo Spirits contributed to the growing visibility of locally produced spirits. Its location in Columbus, a city with an expanding food and beveragescene, further integrated it into a network of independent producers and small businesses.
Despite its progress, Echo Spirits has remained intentionallysmall in scale. This reflects a deliberate decision to prioritize control over production and to pursue measured growth rather than rapid expansion. By maintaining this approach, Bidinger and his team have been able to focus on quality, consistency, and the gradual development of their whiskey stocks.
In his personal life, Bidinger married Megan Sidner in 2019. The two had met four years earlier while both were at Ohio State, maintaining a connection that preceded the founding of Echo Spirits.
By the early 2020s, Echo Spirits had established itself as a recognized participant in Ohio’s modern distilling movement. Its bourbon program, while still younger than those of long-established producers, reflects a sustained commitment to in-house production and careful aging. The distillery continues to operate from its Columbus location, producing spirits and engaging with its community.
Bidinger’s path into distilling reflects a broader shift within the American whiskey industry. Increasingly, new distillers have come from outside traditional backgrounds, bringing technical training and professional experience from other fields. In Ohio, where the contemporary distilling landscape is still relatively young, this pattern has been particularlyevident. Within that context, Echo Spirits stands as a product of deliberate construction rather than rapid emergence. Its identity has been shaped over time through controlled production, incremental growth, and a consistent adherence to grain-to-glass principles. As its whiskey continues to mature, the distillery’s trajectory remains defined less by expansion and more by the steady accumulation of experience, inventory, and refinement.
