Professor Stacy Simpson has been a member of Whiskey University since late 2020. In 2016 Whiskey University began offering Certificates, Diplomas and Degrees. Stacy earned his Bourbon Diploma on February 2nd, 2021.

Captain Simpson teaches at Bellarmine University where she directs the Pep Band, Wind Ensemble and teaches Trumpet in Louisville, KY.  She also performs regularly with the Louisville Orchestra and is Lead Trumpet at Derby Dinner Playhouse. Stacy was born in July of 1971 in Toledo, OH. She grew up in Louisville, KY and now lives in New Albany, IN (the sunny-side of Louisville).

Stacy’s passion for whiskey began around 2002, when she lived in St. Louis, MO and was hired by the St. Louis Symphony. A friend and cellist in the orchestra introduced her to Pappy Van Winkle Rye. She was hooked and bought a case for only $450, of which she still keeps two bottles in her collection for her rainy day fund. She has been a bourbon consumer & collector ever since. The whiskey collection steadily grows. Her Whiskey University education and classes has contributed to a significant increase in the bourbon collection. As of the writing of this bio, there are 234 different whiskeys that include 186 different bourbons in the collection!

Stacy earned her Associate Degree after passing 16 classes on June 15th, 2021. Stacy taught her first class on September 1, 2021, when she taught the “Bourbon 201 class. On August 10th, 2021, Simpson earned her Bachelor of Science Degree with 25 classes, at Whiskey University and the title of "Adjunct Master Bourbon Taster" and the rank of First Lieutenant in the Bourbon Brigade. On September 27th, 2021 Captain Simpson advanced to earn the Title of “Master Bourbon Taster” by earning her Bachelor of Arts Degree and the rank of Captain in the Bourbon Brigade.
